The G.O.A.T



¾ lb.  frozen or fresh cleaned and diced cassava, 1 tsp. olive oil, ½ tsp. salt, ½ tsp. garlic powder.


1 C. raw walnut (that was soaked earlier in cold water for about 1 hour, then drained and rinsed), 1 tbsp. olive oil, 1 diced stalk celery, 1 medium size onion, 2 diced green scallions, 1 C. diced colored bell pepper, 1 tsp. smoke liquid, dash of: smoke paprika, garlic powder, parsley, season salt, black pepper.


Step 1

Bring a large pot of half-filled water to a boil.  Put diced cassava in it, and cook until soft enough to be pricked with a fork.  Throw off water and leave until its cool enough to handle.

Step 2

Pulse walnut and seasoning ingredients in a food processor until all is thoroughly mixed and it looks like minced meat.

Step 3

In a skillet with hot olive oil, caramelize vegetables.  Next add walnut meat to vegetables and fry until it gets to a dark brown color.

Step 4

While cassava is still warm, split lengthwise and remove the stem, then cut in smaller pieces and blend with remaining ingredients to a fine dough.

Step 5

Knead dough to a manageable ball, then roll onto a parchment paper until obtaining a large enough disk.  Spread walnut meat over the dough leaving 1’’ edge at the top.  With the help of the parchment paper, lightly lift the parchment from the filled edge side, and tightly roll to the other then seal sides and ends.

Step 6

Place onto a greased baking sheet and brush with a little oil, then Bake in a 400° F oven for about 25-30 min.  Flip and bake for another 10 min. until slightly brown.  Leave to cool, and slice in desired pieces.  Garnish with sauce of choice.
